Yay. So I have lost a total of 12.5 -13kg now. This is an average of about 3.25kg per month, but I am happy that the loss is slow and steady. I still can’t believe that with what we are eating we are still losing weight! If all goes well, we will continue to lose until we reach our goal weights – another 16kg for me and 12kg for my DH. Hopefully we will achieve this by the end of the year. But I am in no mad rush nd considering we have realised that this needs to be a forever way of eating thing, means it doesn’t matter how long it takes as we will be happy when our bodies settle into the shape they should be.
The exercise bike is about to arrive – waiting for it to be shipped and then we will start cardio which hopefully will speed up the weight loss a little. We also need to do some weights – maybe while cycling. I must admit that as winter approaches, this becomes a more scary prospect to start in the cold miserable mornings – so evenings it may have to be.
I have the MOST DIVINE recipe for low carb muffins that just fills the spot perfectly and we have been feeding them to the babies as well!
LOW CARB MUFFINS
1 cup finely grated carrot
Handful cranberries (no sugar added ones)
1 cup almond flour
1/2 cup coconut flour and 1/2 cup flaxseeds ground (or 1 cup coconut flour – I make my own grinding coconut in a coffee grinder)
2 tsp baking powder
1 tsp real vanilla extract
1/2 cup xylitol
1/2 cup melted coconut oil
Crushed pecans & whole pecans for the tops
4 large eggs beaten
Mix all dry ingredients together, add carrot and mix. Beat eggs, add vanilla & coconut oil. Add to dry ingredients and mix. Scoop into silicone muffin tray, top with a pecan (makes 12) and bake for 15-20 mins at 200 deg. ENJOY!
We still haven’t tried intermittent fasting – but want to sometime. There are definitely mealtimes when I am not at all hungry and could in theory skip eating, but something still makes me feel like I must eat.
Tonight, I am making lamb chops with rosemary and garlic, steamed broccoli and roasted veggies…yum.We have been indulging in a block of dark chocolate with our after dinner coffee quite regularly – hope this isn’t affecting the fat loss, but it could be – if we stop losing we will cut it out for sure…
